Our raw and unpasteurized honey is straight from the hives on our farm. Our bees gather pollen and nectar from local locust trees, tulip poplars, dogwoods, blackberries, blueberries, clover and many wildflowers in our area.

Commercially processed and pasteurized honey is subjected to a filtration and heating process which destroys the yeasts and enzymes naturally present honey in the honey and removes fine particles. Such honey is uniform in color and clear.

Raw honey has more variation in color and flavor, depending on what flowers the bees pollinated. Raw honey tends to appear cloudy because it preserves naturally occurring bits of honeycomb, pollen, propolis, the occasional bee part and enzymes.

Crystallization is a natural occurrence for all honey. Raw honey tends to crystallize more quickly than commercially processed and pasteurized honey. Crystallization does not affect the quality of the honey. It is safe to eat and enjoy! Placing the jar of honey in a pot of hot water will return the honey to its liquid state. Do not overheat the honey.

Raw honey should never be given to an infant less than a year old.
